Lycored will be highlighting the super-stability of its natural colours at IFT

Lycored will be showcasing the super-stability of its natural colours for food and beverages at next month’s IFT 17 (25–28 June).

The international carotenoid experts are getting creative to demonstrate the many advantages of their natural colourants, and to contrast them against less effective alternatives.

Clean lines: non-bleed capacity caught on film

Visitors to booth #1891 will be able to watch a time-lapse film showing that Lycored’s carotenoid-derived colours for fruit preparations do not bleed or fade in yoghurt. By contrast, the film will demonstrate severe migration from a carmine-based colourant, and fade and distortion from a fruit preparation with no colour.

Tammi Higgins, Business Unit Head, Colors, at Lycored,said: “We wanted to bring home how well our natural colours for fruit preps perform in yoghurt. Time-lapse photography was the perfect way to do that. When you see the stability of preps coloured with our true-to-fruit products, and compare it with the bleed and migration you get from carmine, the contrast is stark.”

Excellent performance in beverage applications

Lycored will also be highlighting the stability of its natural colour range in beverage applications. In recent tests, both Tomat-O-Red and Lyc-O-Beta delivered excellent performance in sparkling flavoured waters, demonstrating resistance to fading, ringing and lack of sedimentation.

The company’s natural colours have also been shown to perform excellently in flavoured and coloured UHT milk drinks, demonstrating stability to UHT and homogenisation processes, as well as UV light, and heat.

Lycored’s colours also provide proven stability in fortified gummies, when vitamin and mineral interaction can cause shelf-life issues.

Tomato dream team on show

But it won’t just be about colours. Lycored will also be demonstrating how it can add value to pasta and pizza sauces, ketchup and other tomato-based products.

Its Dry Tomato Pulp (DTP) offers fresh, consistent colour and authentic texture, whereas LycoFibers deliver robust pulpiness, and CTC brings a sweet tomato acidity.

Also on show will be SANTE, Lycored’s unique, tomato-derived concentrate that enhances taste and reduces the need for salt, MSG and other artificial taste enhancers with a simple declaration which allows manufacturers to clean up their labels in a wide range of either dry or liquid based applications.
