Alland & Robert has launched powdered organic acacia gum packaged in a doypack of 150 grams net. The product is distributed online via French marketplace Greenweez and soon, Amazon.
There are two acacia varieties that exudate acacia gum. The company’s acacia gum product is derived from the senegal variety, which it says is the highest quality organic gum with most functional properties.
The product can be added to any recipe, the company says, usually at the same time as the flour, starch or any dry matter. It’s effective at between 1 and 6% of the total weight of the recipe. The company says the product is suitable for vegan and gluten-free applications, and can be used as an emulsifying agent while also providing fibre enrichment.
