Healthy snacks are a growing food trend that shows no signs of slowing down. In the United States, snack food sales increased by nearly 30% from 2007–2012, according to Mintel. Snacks were always known to be consumed in-between meals, but now consumer's busy lifestyles are turning snacks into mini meals that are enjoyed on-the-go. A recently released report from Neilsen states that global consumers spent US$374 billion annually on snack foods between 2013 and 2014; this is a year-on-year increase of 2%; and although this market is highly competitive, products that taste great and offer a health benefit are seeing an instant edge.
