Savor and AAK partner to develop sustainable speciality fats for dairy alternatives and bakery markets

The two-year collaboration combines Savor's carbon-derived fat technology with AAK's speciality oils expertise to create next-generation functional fats for dairy alternative and bakery applications, while strengthening supply chain resilience

Food ingredient innovator Savor has entered a two-year strategic collaboration with speciality oils and fats supplier AAK to develop and commercialise next-generation fat-based ingredients for dairy alternative and bakery applications, targeting food manufacturers in North America and Europe.

The agreement also includes an equity investment from AAK into California-based Savor, underscoring the companies' shared ambition to accelerate the commercialisation of sustainable speciality fat ingredients.

The partnership will combine Savor's proprietary Carbon Crafted platform — which produces fats directly from carbon rather than conventional agricultural feedstocks — with AAK's expertise in plant-based oils, formulation and customer co-development.

According to the companies, the resulting speciality fats could require up to 1000 times less land and generate up to 98% lower carbon emissions than conventional alternatives.


For nutraceutical and functional food manufacturers, the collaboration reflects growing interest in resilient ingredient supply chains alongside ingredients with stronger sustainability credentials.


Although the initial focus is on dairy alternatives and bakery products, the technology could eventually support a broader range of functional food applications where fat composition influences texture, stability and sensory performance.

Kim Olofsson, Global Head of R&D at AAK, added that Savor's technology creates a new source of saturated fats independent of agriculture.

In addition, these fats can be designed together with AAK's plant-based oils for a vast array of functionality and solutions.

The collaboration comes as ingredient suppliers face increasing pressure to reduce reliance on agricultural commodities that are vulnerable to climate-related disruption and price volatility.

By manufacturing fats without the need for fertile land, fertilisers or significant freshwater resources, Savor's platform aims to provide manufacturers with a more predictable and geographically flexible ingredient supply.

AAK, which operates 19 production facilities and 16 Customer Innovation Centres worldwide, has expanded its innovation partnerships in sustainable food ingredients, including recent collaborations that support next-generation food technologies.

If successfully commercialised, the partnership could broaden the portfolio of speciality fats available to food and nutraceutical manufacturers looking to formulate products that balance functionality, sustainability and supply chain resilience.
